To be honest, I am not very keen on soy bean schnitzel but like to eat vegetarian schnitzel. Here another recipe:
Egg plant schnitzel
Ingredients:
3 – 4 big eggplants
1 egg
some milk
seasoned sea salt, pepper
bread crumbs
Recipe:
Cut eggplants longitudinal, so we will have flat and broad pieces similar to meat schnitzel. Rub some salt and pepper into the eggplant schnitzels. Beat the egg with some salt and pepper along with milk. Dip the schnitzels in the egg/milk mixture and then into the bread crumbs exactly like normal schnitzels. Saute it like schnitzels in oil or butter. A little bit more calories
